Coming from a background in home-style cooking, Tory began like many passionate chefs: as a child standing on a stool next to his mother, picking up a variety of recipes through hands-on learning. Tory’s fixation on exploring flavors and cooking techniques grew with him, turning his childhood obsession for fishing into a love for sushi at 14 years old. By the time he turned 19, he began bussing tables at a popular sushi restaurant. He quickly worked his way up to prep chef, then sushi chef where his knowledge and versatility flourished. Tory then became head chef, managing cooking lines and food prep for over ten years.
As his mastery of cooking styles expanded, Tory built a unique culinary arsenal by fusing sushi with California barbecue. The techniques and recipes he learned from his stool as a child would honor his mother’s home-style roots. His experience with sushi and deep respect for its traditions drove him to adapt and innovate. When he left the restaurant industry, he set his sights on starting his own business where freshness would be paramount, and service could be customized.
